Banana Bread

This classic banana bread is so good, it will have you buying extra bananas just so you have enough on hand to bake it.

Ingredients

Dough

2 cups (240g) all-purpose flour
1½ tsp. baking powder
½ tsp. (3g) salt
1/8 tsp. (.27g) ground nutmeg
½ cup (113g) Plugrá® Premium Butter, unsalted, softened
½ cup (100g) granulated sugar
½ cup (98g) dark brown sugar
2 (100g) eggs
1 tsp. (7g) vanilla extract
1 cup (225g) mashed banana from about 3 medium bananas
¾ cup (84g) chopped walnuts

Preheat oven to 350°F. Spray 9 x 5-inch loaf pan with non-stick cooking spray; set aside.

Combine flour, baking powder, salt, cinnamon, and nutmeg in a medium bowl; set aside.

Cream butter and sugars in large bowl of an electric mixer. Add eggs and vanilla extract, mix until blended. Add bananas. Gradually add flour mixture and nuts. Mix on low until blended then beat on high for 30 seconds to aerate the batter.

Spread mixture into prepared pan. Bake 55 to 60 minutes or until toothpick inserted in center is clean when removed. Remove to cooling rack; cool 10 minutes. Gently loosen edges of bread from pan; remove and cool completely. Cut into slices to serve.
VARIATION:
These can also be made as muffins. Divide the batter into 12 greased muffin cups and bake for 25 to 30 Minutes or until a toothpick inserted in the center is clean when removed.
