Ingredients

Filling

6 cups (3 pints) fresh or frozen blueberries
¾ cup granulated sugar
1 tsp lemon zest
¼ cup fresh lemon juice
⅓ cup cornstarch
2 tbsp salted Plugrà butter, melted

Topping

1½ cups old-fashioned rolled oats
6 tbsp all-purpose flour
6 tbsp light brown sugar
½ tsp baking powder
½ tsp salt
¼ tsp ground ginger
¼ tsp ground cinnamon
8 tbsp (1 stick) salted Plugrà butter
6 mini 5-inch aluminum pie tins
vanilla ice cream
Steps
1
1. Heat oven to 375ºF. Make the fruit filling by mixing together the blueberries, sugar, lemon zest and juice, cornstarch, and melted butter in a bowl. Set aside.
2
2. In a separate bowl make the topping by mixing together the oats, flour, brown sugar, baking powder, salt, ginger and cinnamon. Cut the butter into small pieces and add to the dry ingredients. With clean hands or a mixer, mix the butter into the dry ingredients until a crumbly dough forms. Set aside.
3
Place mini pie tins on a foil-lined baking sheet and fill almost to the top with filling, about 1 cup of filling in each tin.
4
Divide topping between pie tins by crumbling it in an even layer over the berries
5
Bake until juices are bubbling near the center, and topping is golden brown, 30 to 35 minutes. Cover the pies with foil if the topping is getting too brown.
6
Let pies cool at least 15 minutes before serving; or let cool to room temperature and cover with a towel or foil and store at room temperature for up to a day. Reheat to serve. Serve warm with ice cream.
7
MAKE AHEAD AND REHEAT ON GRILL Make the morning of your BBQ, cool then cover with plastic wrap or a clean dish cloth.
8
When ready, heat one side of the grill to 350ºF. Place pies on the side of the grill without flames (Do not place on the heated side of the grill).
9
Close grill and let the pies heat for 5 to 8 minutes until just warmed through.
10
Remove from grill using a large metal spatula and serve with a scoop of ice cream on top. (Pie tins are hot. Place each on a little plate or thick napkin to serve)
