Toasted Pound Cake with Orange Honey Butter

  • 1/2 cup Butter, softened
  • 1/2 small orange, juiced
  • 1 teaspoon orange zest
  • 2 tablespoons honey
  • 1 pint blackberries
  • 1 tablespoon sugar
  • 1 1 pound cake, prepared


  1. Combine all butter, orange juice, zest, and honey in a mixer on low speed until combined. Roll into a log in parchment or wax paper and refrigerate until ready to use.
  2. Combine berries and sugar; set aside.
  3. Slice pound cake into 1" thick slices. Place pound cake slices on a baking sheet and toast until lightly golden brown.
  4. Spread each slice of pound cake with Orange Honey Butter. Top with blackberry-sugar mixture and serve.
