  • Compound Butter
  • 1/2 pound butter, unsalted, softened
  • 1/2 cup hazelnut-cocoa spread
  • 2 1/2 tablespoons mascarpone cheese
  • 1/4 cup hazelnuts, chopped
  • 1/2 teaspoon vanilla extract
  • 1/3 teaspoon almond extract
  • Coating
  • 1 tablespoon powdered sugar
  • 2 teaspoons cocoa powder, unsweetened
  • 1/4 teaspoon espresso powder, instant


  1. Place all ingredients in a food processor and pulse until well mixed, about 1 minute.
  2. Remove butter from processor and spoon onto parchment paper. Roll into a log, using edge of baking sheet to form a tight log. Place in freezer for 15 minutes until firm.
  3. Remove from freezer and roll again, then unroll parchment paper.
  4. In a small mixing bowl, combine coating ingredients, sprinkle mixture onto butter log and roll until completed covered.
  5. Refrigerate roll for 30 minutes before serving.
