A unique savory, sweet compound butter.


  • 1 pound butter, unsalted, softened
  • 1/2 shallot, small, peeled, minced
  • 1/4 cup strawberry preserves
  • 2 tablespoons balsamic vinegar, aged
  • 1/4 teaspoon black pepper, fresh, ground
  • Salt to taste


  1. Combine all ingredients in a stand mixer starting at low speed and increasing speed until all ingredients are well combined.
  2. Shape into a log using parchment or wax paper.
  3. Refrigerate until firm (about 2 hours), slice into thin rounds as needed or transfer to plastic wrap to store.
