A delicious concotion for any rhubarb lover.


  • Base
  • 3/4 cup unsalted butter at room temperature
  • 2/3 cup granulated sugar
  • 2 teaspoons vanilla bean paste or extract
  • 1/2 cup almond flour
  • 1/4 teaspoon salt
  • 2 cups all purpose flour
  • 1 cup strawberry rhubarb jam
  • Topping
  • 3 tablespoons all purpose flour
  • 3 tablespoons granulated sugar
  • 1/8 teaspoon salt
  • 2 tablespoons unsalted butter chilled and diced
  • 1/4 cup sliced almonds


For the base:
  1. Preheat oven to 350°F.
  2. Spray a 9-x-13-inch baking pan with baking spray.
  3. Using a stand mixer with a paddle attachment, cream the butter and sugar together until light and fluffy, about 3 minutes.
  4. Add the vanilla bean paste and almond flour and beat until incorporated.
  5. Add the salt and flour and mix until it comes together with some crumbs.
  6. Spread the dough and crumbs into the prepared pan and press the dough evenly over the bottom of the prepared pan.
  7. Evenly spread the jam over the dough.
For the topping:
  1. In a small bowl add all the ingredients and then rub with your fingers until you get it to be crumbly.
  2. Sprinkle over jam.
  3. Bake for 50-60 minutes. Top with foil if top browns too quickly.
  4. Remove from oven and cool on a wire rack.
  5. Cut into squares.
