Description

Add a little holiday cheer to your day with Eggnog Shortbread Sprinkle Cookies.

Ingredients

  • Cookies
  • 1 cup Butter, unsalted, room temperature
  • 3/4 cup powdered sugar
  • 1/2 cup eggnog
  • 1 teaspoon vanilla
  • 2 cups all purpose flour
  • 1/2 cup potato starch flour
  • 1 teaspoon freshly ground nutmeg
  • 1 teaspoon baking powder
  • 1/3 cup holiday colored sprinkles
  • Glaze
  • 1 cup powdered sugar
  • 1 tablespoon bourbon
  • eggnog as needed, to thin out glaze

Instructions

Cookies:
  1. Using a stand mixer with the paddle attachment, beat the butter and powdered sugar together, about 3 minutes.
  2. Add the vanilla extract and nutmeg and beat 30 seconds.
  3. Add the flour and eggnog. Beat on low speed until just combined.
  4. Add the sprinkles and mix until dough comes together.
  5. Roll the dough up into two small logs and wrap in wax paper to keep from drying out in fridge. Place in fridge for about 2 hours.
  6. Preheat oven to 350°F.
  7. Remove chilled dough from refrigerator and roll out to 1/4 inch thick.
  8. Place onto a cookie sheet sprayed with baking spray about 2 inches apart.
  9. Bake 10 minutes until golden brown at bottom.
  10. Add glaze if desired once cooled.
Glaze:
  1. Mix the powdered sugar and bourbon together, adding the eggnog 1 tablespoon at a time until you reach desired consistency.
