Our Creamy Carrot Soup starts with sauteed onions and garlic with simmered carrots in creamy Plugrá butter.


  • 1 medium onion, chopped
  • 2 cloves garlic, chopped
  • 1/4 cup Butter
  • 2 pounds carrots, sliced
  • 3 cups chicken broth
  • 2 tablespoons cornstarch
  • 1 cup milk
  • 1/8 teaspoon cracked pepper
  • 1 1/3 cups plain yogurt


  1. Sauté onion and garlic in butter until tender.
  2. Add carrots and 1 cup of the chicken broth. Cover and cook 10 minutes until carrots are tender.
  3. Transfer mixture to blender or food processor in batches and process until smooth. Return to pan.
  4. Dissolve cornstarch in remaining 2 cups broth; add to carrot mixture with milk and pepper.
  5. Cook, stirring until soup just begins to boil and is slightly thickened. Whisk in yogurt.
  6. Serve immediately.
