This easy-to-make greek vegetable casserole, with onions, zucchini, potatoes, creamy Plugrá butter, and a blend of seasonings, completes any meal.


  • 1/2 cup Butter
  • 1 eggplant, cubed
  • 2 onions, diced
  • 3 zucchini, cubed
  • 1 pound potatoes, cubed
  • 1 can plum tomatoes, diced
  • 2 cloves garlic, minced
  • 2 tablespoons parsley, chopped
  • 2 tablespoons oregano, chopped fine
  • 1 cup seasoned bread crumbs


  1. Preheat oven 350ºF.
  2. Grease baking dish with butter.
  3. In the baking dish, combine all ingredients, except the breadcrumbs, and mix together. After all ingredients are mixed well, top with bread crumbs and dot with remaining butter.
  4. Bake for approximately 1 hour or until potatoes are soft (fork tender).
